Sorry to but in on someone else thread but I've just lowered my my mk1 sporting 60/40 with complete kit ie: shocks and springs dose this happen very often with the shaft when lowered this amount 60mm cos if so I wish I had'nt done it

I have a sporting and is lowered 60mm all round and never had a shaft problem yet other than a few times oil has weeped from the shaft seal

might get away with popping the top suspension strut bolt out and loosening the bottom then pull the top of the hub outwards to make some space for yourself

Tbh when lowering a vehicle that much you should have the geometry laser level aligned, this would pull the camber back in and eliminate the problem
well chapped the driveshaft back in and the car is now back to running fine, now will order 2 new driveshafts as both gators have cracks in them.
you can just replace the cv boots, no need to order new drive shafts
Boot's only cost around 5pound save yourself some money shafts are expensive
