I will mention a diesel, although it would have to be a bigger car, as with the little one to put in the back etc 5 doors and Escort size is ideal.

2nd time a Nova has been mentioned Too old! And I might drive it from time to time so its not gonna happen, not in Essex LOL.

I was thinking maybe the Escort on about a M or P plate, might possibly have airbags and pas?

    I'd go for:

Fiat Tipo - surprisingly solid for a Fiat,
Seat Ibiza - after VW got involved,

Thing is, for £700 its likely to be quite high mileage (70k +) so need a reliable engine.

Peugeots arent reliable after about 50k, especially the older ones (it may have changed in modern ones tho).
VW's more than likely still bulletproof.
Fiats will possibly work, but only if treated well!
Fords, are the 'Mr reliables' of the world I think...

What about a Corsa? I'll hopefully be getting 1 without an MOT/knackered engine for £200, buying a 1.2 engine for around £30-40, fitting it and sorting everything else thats wrong with it so in the end i wont be spending more than £400!!! Just a thought! Shes got you to repair stuff for her!
